PREMIUM BARREL DIDACUS

Wine made from Syrah vines on trellises Almanzora Valley at 700 m altitude. In wine grapes have been selected with a perfect state of maturity and health encubándolas and maintaining a cold maceration for about 6 days before the start of fermentation, favoring the transfer of fruity aromatics. Alcoholic fermentation was performed by increasing the temperature gradually to 26 ° C, and after this wine is bled by gravity and pressing lightly without the use of aggressive mechanical means to give this feature tannic wine smoothness.

The malolactic fermentation has occurred in Hungarian oak barrels and American (40-60%) and complete it has racked to French oak wine barrel holding on its lees for 9 months, bringing softness and maturity to their aromas, and elegant and complex flavors of these woods.

 

Tasting Notes

Cherry red colored wine with touches of garnet and purple hues. Bright, clean and medium-high. The nose is intense and complex, where there are aromas of licorice, milk chocolate, black pepper, coffee and caramel background of ripe black berries, and plums, figs and black olives and balsamic aniseed, damp earth and truffles. The palate is sweet, enveloping, with soft tannins and great volume. It has good acidity and is warm to the final aftertaste of chocolate, coffee and roasted aromas.
